While they may not be the most cost-effective drink on a night out, there’s something about cocktails that bring out the summer vibes. But when you’re paying around $20 a pop for a glass of spirits all dressed up, you’d really want to know that whatever’s in that glass has been shaken (or stirred) by the best in the business. Thankfully these bars know how to do a summer cocktail right, meaning your hard-earned $20 will be well spent.
From the masterminds behind El Publico, La Vida Urbana is the newest kid on the block in Leederville’s Newcastle street. While the popular Mexican restaurant is famed for their knock-your-socks off tequila, their recent addition to the drinks menu is a must-try this summer. The Hibiscus Sangria contains house made hibiscus infused syrup, limoncello, Vino Tinto, freshly squeezed orange juice, grapefruit fizz, fresh lime, and of course, a shot (or two) of tequila. You may want to phone in a friend to help you finish off this 1.2L jug…

Setting the standard (pun intended) for most bar slash restaurants in the Perth CBD, this neat little joint has really got it going on. Whether you choose to set up camp inside, outside or on the rooftop, you’ll almost feel at home here. Not to mention the fact that the drinks menu will keep you well hydrated throughout the evening. For something fruity and light, their Pretty Punches are a go-to. Putting a contemporary twist on the old school punch, they contain most of the traditional ingredients, as well as purées and sherbets, and are best enjoyed in the wine garden.

This little neighbourhood bar may be small, but it certainly delivers some big stuff. Taking ownership from a passionate sommelier, Budburst is the ideal spot to hang out with a few friends on a Tuesday night and collectively deal with the fact that the weekend is still three working days away with a summer cocktail in hand. And that cocktail would definitely have to be the Stiggins Daiquiri. Created using Plantation ‘Stiggins’, a ‘fancy’ pineapple rum, a squeeze of lime juice and a drop of their in-house pineapple syrup, it’s practically got ‘summer holidays’ written all over it.

Where can you pull up a chair and watch the waves roll in with a cocktail in hand you ask? Odyssea of course. Boasting views of our beautiful coastline, this beachside restaurant and bar is nothing short of seaside elegance. The extensive drinks menu has something for everyone, and channels ‘summer vibes’. The Blueberry and Kaffir Lime Martini came an equal first place with their signature Pomegranate and Peach fizz cocktail. The martini combines kettle one vodka, triple sec, blueberry puree and kaffir lime foam, a strange combination that somehow works exceptionally well.

If you’re a city slicker like myself, you probably don’t venture out to Fremantle enough to know that the guys at Benny’s now make their own Aperol sorbet. Yes you read that correctly, Aperol Sorbet. This house-made Aperol sorbet slowly melts into some of the finest Italian Prosecco to deliver something so refreshing and moreish, you’ll need to stop yourself from ordering one too many.
